First cultivated by the Aztecs and other Mesoamerican peoples, vanilla was introduced into Europe by Hernán Cortés in the 1520's. For 300 years the Spanish held a monopoly on the vanilla trade out of Mexico, until a 12 year-old African slave on the French-held island of Réunion discovered how to hand-pollinate vanilla, expanding production to the other side of the world. To this day, most of the world's vanilla comes from Madagascar, Réunion, and other islands in the Indian Ocean.
